CONFETTI RICE SALAD 
3 c. cold cooked rice
1 1/2 c. finely chopped celery
1/3 c. diced pimiento
1/3 c. chopped sweet pickle
2 tbsp. finely chopped parsley
1/2 c. mayonnaise
1/2 c. dairy sour cream
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper

Mix together rice, celery, pimiento, pickle and parsley. Stir together mayonnaise, sour cream, lemon juice, salt and pepper. Add to rice mixture and mix thoroughly. Pack in 1 quart mold and chill at least 1 hour. Unmold and garnish, if desired. Yield: Serves 6.
