MORNING GLORY MUFFINS 
4 c. flour
2 1/2 c. sugar
4 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
4 c. apples, grated
1 c. raisins
1 c. pecans, chopped
1 c. coconut
1 c. carrots, grated
6 eggs
2 c. vegetable oil
1 1/2 tsp. vanilla

Mix flour, sugar, baking soda, cinnamon and salt together in large bowl. Stir in apples, raisins, pecans, coconut and carrots. In a separate bowl, beat eggs, oil and vanilla. Add to other mixture, stirring until just combined. Spoon into muffin tins filling 2/3 full.

Bake in preheated 350°F oven for 35 minutes until golden brown. Cool in tins on rack for a few minutes before removing and cooling completely on rack.

Makes 4 dozen.
