NANTUCKET MORNING GLORY MUFFIN 
4 c. flour
2 1/2 c. sugar
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. salt
4 c. grated apple
1 c. raisins
1 c. pecans
1 c. coconut
1 c. carrots
6 eggs
2 c. vegetable oil
4 tsp. vanilla

Mix dry ingredients. Add apples, raisins, pecans, coconut and carrots. Mix eggs, oil and vanilla. Add to mixture and mix well. Bake at 350 degrees for 35 minutes. Makes 36.

This is a great recipe that you can adjust if you are more health conscious. You can do 1 cup white flour, 1 cup whole wheat flour. And instead of the whole amount of veg. oil, you can substitute 1 cup canola oil and 1 cup of natural applesauce. I'm sure you could probably use a substitute for the eggs, but I have not tried that yet. Enjoy!
