MORNING GLORY MUFFINS 
1/2 c. raisins
1 c. grated carrots
1 lg. tart green apple, grated
2/3 c. vegetable oil
1 tsp. nutmeg
2 c. flour
1 c. grated zucchini
1/2 c. sliced almonds
2 tsp. vanilla
2 tsp. baking soda
1 c. sugar
3 eggs
1/2 tsp. cinnamon
1/2 tsp. salt

Soak raisins in hot water to cover for 30 minutes. Preheat oven to 350 degrees. Grease muffin cups. Mix flour, sugar, soda, and spices in large bowl. Stir in raisins, carrots, zucchini, apple, and almonds. Beat eggs with oil and vanilla. Stir into flour mixture until just combined. Divide into muffin cups, fill to top. Bake to golden brown, about 20-25 minutes. Cool thoroughly before covering. Makes about 14.
