SPINACH BALLS | |
2 boxes frozen, chopped spinach, cooked and drained 2 c. Pepperidge Farm herb stuffing mix 4 eggs, beaten 1 lg. onion, grated 3/4 c. butter, melted 1/2 c. grated Parmesan cheese or 1/3 c. grated Romano cheese 3/4 tbsp. garlic powder Pinch of black pepper 2 tbsp. chopped parsley Sm. pretzel sticks Mix all ingredients, except the pretzel sticks) well. Form into small balls. Place on a cookie sheet and freeze. After frozen, place in plastic bags in freezer until needed. Bake frozen in preheated 375 degree oven for 20 minutes. (These may also be cooked in the microwave oven.) Makes about 36 (1 1/2 inch) balls. After cooking, place a small pretzel stick in each instead of a toothpick and serve. |
