CREAM OF MUSHROOM SOUP 
2 tbsp. butter
1/2 c. chopped onion
1/2 lb. chopped mushrooms
1 tbsp. flour
2 c. chicken stock or canned broth
1/2 c. skim milk (can use cream)
Salt & pepper to taste

Melt butter and add onion and mushrooms. Cook over low heat 15 minutes. Stir occasionally. Sprinkle with flour and cook a few minutes. Slowly add stock and heat, stirring until it boils. Reduce heat; simmer 10 to 20 minutes. Stir in milk (or cream) and add salt and pepper.
