SAUERBRATEN 
3 or 4 lb. beef roast
1 tbsp. salt
2 tbsp. sugar
12 whole cloves
6 bay leaves
2 med. onions, sliced
6 whole black peppercorns
1/2 lemon, sliced
3/4 c. vinegar

Fill pot with water and marinade mixture to cover the beef. Put in refrigerator and marinate 3 or 4 days, turning meat each day.

Save marinade liquid. Brown meat and then add liquid. Add 6 ginger snaps and simmer 2 to 2 1/2 hours. Strain liquid and thicken for gravy. Serve with Kartoffelklossen (potato dumplings) and red cabbage.

KARTOFFELKLOSSEN
4 boiled potatoes
1/2 c. Farina
Flour
2 eggs
Pinch salt
Water

Rice the potatoes in a ricer. Add eggs, Farina and salt. Place flour in your hand and roll into firm balls. Boil water and boil dumplings for 10 minutes uncovered.
