ZUCCHINI CASSEROLE 
4 slices bacon, cooked crisp
1/4 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped red and green peppers
2 c. chopped zucchini squash
2 c. chopped tomatoes
1 1/2 tsp. salt
1/8 tsp. oregano
1/4 tsp. pepper
1/8 tsp. thyme
1/2 c. raw rice
1 c. shredded cheese

Fry bacon; remove from grease. Saute onion, celery, and peppers until tender; add rice and stir well to coat rice. Add squash, tomatoes, and seasonings. Cook until done.

Put in casserole, then sprinkle with cheese and place in 350 degree oven until cheese melts. Bacon should be crumbled over top before it is served.
