AMARETTO APRICOT SAUCE | |
8 apricots, peeled, pitted and diced (about 2 cups) 1/4 c. Amaretto Liqueur 3 c. heavy cream 1 c. sugar Toss apricots with Amaretto in large bowl; mash lightly. Combine 1 cup of the cream and sugar in small saucepan. Heat slowly, stirring constantly, until sugar dissolves. Pour over apricot mixture. Stir in remaining 2 cups cream. Refrigerate at least 1 hour or until well chilled. Pour mixture into the 8 cup can of electric or hand cranked ice cream freezer. Freeze following manufacturer's directions. Cooks Tip - If you would like the flavor of Amaretto and apricot, but do not have an ice cream freezer, dice 8 apricots into a small saucepan; stir in 1/4 cup sugar and cook over low heat, stirring constantly until apricots soften; remove from heat. Stir in 1/4 cup Amaretto Liquor and serve as a sauce over store bought vanilla ice cream. |
