POTATO SALAD 
This potato salad is best when chilled overnight, so make it a day ahead!

6 c. potatoes, cooked and sliced
1/4 c. onion, finely chopped
3 eggs, hard boiled and chopped
3/4 c. mayonnaise
1 tsp. mustard
1 tsp. salt
1/4 tsp. pepper

In a large bowl, place slice cooked potatoes, chopped onions and eggs. In a cup, blend mayonnaise with prepared mustard, salt and pepper. Add to the potatoes. Mix well and chill thoroughly before serving.
