ITALIAN SPINACH PIE | |
1 (16 oz container) 2% lowfat cottage cheese 1 (10 oz pkg) frozen chopped spinach, thawed, well drained 1 cup part-skim mozzarella cheese 4 eggs, lightly beaten 1 (7 oz jar) roasted red peppers, well drained, chopped 1/3 cup grated Parmesan cheese 1 tsp. dried oregano Preheat oven to 350°F. In a large bowl, mix all ingredients until well blended. Spray a 9-inch pie plate with cooking spray. Pour ingredients into pie plate. Bake 40 minutes or until center is set. Great with a salad. Can also be made with egg substitute, such as Egg Beaters, to lower calories and cholesterol. Submitted by: Sherry Monfils |
