LOUISIANA SHRIMP AND SAUSAGE
CREOLE
 
4 tbsp. butter
1 c. chopped onions
1 c. chopped celery
1/2 c. green peppers
3 cloves garlic, minced
2 1/2 c. diced tomatoes
3 lbs. raw cleaned shrimp
3 tbsp. chopped parsley
1 tsp. salt
1/4 tsp. cayenne (red) pepper
3 bay leaves
3 c. water
2 tbsp. flour
1 1/2 lbs. smoked sausage

Cut sausage crosswise in 1/4 inch to 1/2 inch slices. Melt butter in saucepan. Saute onion, celery, and green pepper until soft (about 5 minutes). Stir in garlic and fry 5 minutes more. Remove pan from direct heat and stir in water. Mix flour with small amount of cold water. Slowly stir into cooked mixture. Add parsley, bay leaves, salt, cayenne, and tomatoes. Simmer 15 minutes. Add shrimp and sausage. Cover and simmer 30 minutes. Serve over rice.
