SWEET POTATO CAKE 
2 1/2 lbs. flour
1 1/2 tbsp. salt
2 tbsp. baking soda
2 tbsp. cinnamon
1 tbsp. nutmeg
12 eggs

Mix well and set aside.

Cream together: 2 qts. plus 1 c. sugar

Add 12 eggs, 1 1/2 quarts pumpkin or sweet potatoes. Beat until well blended. Add dry ingredients alternately with 2 cups water. Beat 2 minutes. Spray 3 small pans. Pour evenly. Bake at 350 degrees for 40 minutes. Pour glaze over as soon as taken from oven.

GLAZE:

1 c. buttermilk
2 c. sugar
1 tsp. baking soda
1 tsp. vanilla
1/2 lb. butter

Blend all ingredients. Cook 5 minutes. Pour over hot cake.

Makes 1 sheet cake or 3 small cakes.
