HOT CHICKEN SALAD PIE 
1 (9 inch) pie crust (baked)
2 c. diced cooked chicken
1 1/2 c. diced celery
1 tsp. grated onion
1 tsp. salt (optional)
1/4 tsp. black pepper
1 tsp. lemon juice
1/3 c. chopped walnuts or cashews
1 1/2 c. mayonnaise
1/2 c. Cheddar cheese
1 c. finely crushed potato chips or 1 c. cornflake crumbs

Combine all ingredients with mayonnaise (except cheese and chips or cornflakes). Mix lightly and place in baked pie shell. Top with chips and cheese. Bake in preheated oven at 350 degrees for 25 to 30 minutes.
