5 med. size carrots, peeled & sliced 3 med. sweet potatoes, peeled & sliced 1/2 tsp. cinnamon 3 tart apples 1/3 c. honey 2 tbsp. melted butter or fat Cover and cook carrots and potatoes in saucepan until tender. Mash until fluffy and season with cinnamon. Peel and thinly slice apples. In a 1 quart greased casserole, alternate layers of mashed vegetables and apple slices, ending with a layer of vegetables. Drizzle honey combined with melted butter or fat over each layer. Bake in preheated 350 degree oven for 45 minutes. |
