CHEWY OATMEAL COOKIES 
1/2 c. butter
3/4 c. sugar
3/4 c. brown sugar
1 egg
2 tsp. vanilla extract
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 c. rolled oats
1 c. packed coconut
1 c. chocolate chips, raisins or macadamia nuts

Preheat oven to 350 degrees. In a large bowl, beat together butter, sugars, egg and vanilla until light and fluffy. Add flour, baking soda, and powder, beating until well blended. Stir in the rest of the ingredients. Shape dough into 1 3/4 inch balls. Place 3 inches apart on ungreased baking sheets. Bake 12-15 minutes or until golden brown. Cool 2-3 minutes on sheets then remove to racks to cool completely. Makes about 20 3-inch cookies.
