PRIME RIB 
1 (4 lb.) boneless rib eye
4 cloves garlic, minced
1 tsp. salt
1 tsp. pepper

Combine minced garlic, salt and pepper. Rub boneless rib eye with mixture. Put on rack in roasting pan. Set oven at 350 degrees and roast, uncovered for 20 minutes per pound. That would be 1 hour and 20 minutes for a 4 pound roast. Let it rest on cutting board for 5 or 10 minutes before cutting. Yields 10 servings.

I cover the boneless rib roast with plain mustard and then sear that at 400°F for 15 minutes then down to 350°F until meat temp is med rare.
