CORN CREOLE CASSEROLE 
1 med. onion, chopped
1 green pepper, chopped
1 stick butter
4 tbsp. flour
2 c. cooked rice
2 c. whole kernel corn
2 c. canned tomatoes, mashed
2 hard-cooked eggs, finely chopped
1 tsp. Worcestershire sauce
1/2 tsp. Tabasco sauce
1 1/2 tsp. salt
Grated cheese or buttered bread crumbs

Slightly brown onion and green pepper in butter. Add flour and brown. Add remaining ingredients except cheese; mix well. Pour into greased casserole. Cover with cheese. Bake at 350 degrees until cheese melts. Yield: 6 to 8 servings.
