MACARONI AND LOTS OF CHEESE 
3 c. tri-color corkscrew macaroni
1/4 c. thinly sliced green onion
2 tbsp. butter
2 tbsp. flour
1/8 tsp. pepper
2 c. milk
1 1/2 c. sharp Cheddar cheese
1 (3 oz.) pkg. cream cheese, cubed and softened
1/3 c. grated Parmesan cheese

In a large Dutch oven cook macaroni according to package directions; drain.

Meanwhile, in a large saucepan, cook onion in butter until tender. Stir in flour and pepper until well blended. Add milk all at once. Cook and stir over medium heat until thickened and bubbly.

Stir in Cheddar cheese and cream cheese until melted. Stir in macaroni mixture. Turn into a greased 1 1/2 quart casserole. Sprinkle with Parmesan cheese. Bake at 350 degrees for 20 to 25 minutes or until heated through. Makes 4 servings.
