BASIC CUSTARD PIE FILLING | |
6 egg yolks, (save whites for meringue) 2 c. sugar 3 tbsp. flour (any kind) 1 lg. can evaporated milk 3/4 stick butter 1 tsp. vanilla 1 can of water Combine egg yolks, sugar, flour in large boiler, stir add other ingredients and stir. Cook over low heat; stir continually (do not let burn) until it thickens. This may be poured over bananas for banana pudding or with following variations used as pie filling. Top all pies with meringue topping. CHOCOLATE PIE: Same as above except 3 tablespoon of cocoa to mixture. LEMON PIE: Same as above except add juice of 4 to 5 lemons and few drops of yellow food coloring. COCONUT PIE: Same as above except add 1 cup shredded coconut. |
