PAN KABAB 
1 1/2 lbs. lean ground meat (beef or veal)
1/3 c. grated onion
2 tbsp. ground bread crumbs
1/4 c. chopped parsley
2 tomatoes (sliced)

Mix meat, onion, bread crumbs and parsley very well. Pat into greased pan and cut it into 6 triangles. Brown on one side then flip them over, cover each triangle with two slices of tomatoes. Add pinch of salt on the top. Cook 5 minutes uncovered, then cover and cook for 10 to 15 more minutes on medium. Serve over rice or with French fries and green salad.
