CHEESE STUFFED ZUCCHINI 
2 med. zucchini
1 sm. onion, chopped fine
1 tbsp. butter
3/4 c. cottage cheese
2/3 cooked rice
1 egg, beaten
1 tbsp. parsley flakes
1/4 tsp. salt
1/8 tsp. basil
2 slices American cheese, cut in 16 strips

Cut ends off zucchini and cook whole in small amount of water for 8 minutes or until tender. Halve lengthwise. Scoop out center and dice. Saute onion in butter, mix in zucchini, cottage cheese, rice, eggs, parsley, salt and basil. Lightly salt shells and fill with cottage cheese mixture. Place in a baking dish and bake covered for 25 minutes at 350 degrees. Place 4 cheese slices on each half and bake uncovered for 5 minutes. Makes 4 servings.
