LEMON FILLING 
1 c. sugar
1/2 c. water
Juice of 2 lemons
2 tbsp. cornstarch
2 eggs
2 tbsp. butter
1/2 tsp. butter extract

Mix sugar with cornstarch. Add water which has been beaten with eggs. Add lemon juice and cook until thick while stirring constantly on medium fire. Take off fire and add butter and butter extract.

NOTE: For a two-layer cake to be used for icing, I make 1 1/2 times this recipe.
