MURPHY'S COUNTRY FRIED RICE 
1 cup cooked white rice
1/2 cup chopped onion
3/4 cup shredded carrot
3 strips raw bacon, cut into smaller strips
1 1/2 cups cooked ham, chopped into 1/2 inch pieces
1/2 stick butter
salt and pepper, to taste

In a large skillet, fry bacon pieces over medium heat. Leave the bacon and the bacon fat in the pan. Melt half of the butter into the pan. Add chopped onions. Cook approximately 2 minutes, to soften.

Add carrots and cook for 2 to 3 minutes, until soft. Add cooked ham. Add salt and pepper, to taste. Add the rest of the butter to the pan.

When melted, add cooked rice. Add more salt and pepper (optional). Sauté for 3 to 4 minutes until rice is heated through and ingredients are well blended.

Serve as a side dish or as a meal. It's great to make this dish using leftover Easter ham.

For a lighter version, you can drain the bacon fat and use margarine, but I prefer the butter and bacon fat version.

In my Murphys country fried rice recipe i accidentally put 1 cup cooked rice, when you actually need to cook a cup of rice first and then add that to the recipe.
