FRIED SWEET POTATOES 
medium or large cold baked sweet potato
butter, as much as needed to barely cover the bottom of the skillet

Place a heavy skillet (cast iron) on medium heat, add butter and let it melt. Peel the potato and slice into slices about 1/3 inch thick. Place into hot skillet and cook slowly so the butter does not burn. Brown on each side. Remove and drain on paper towels. Some people sprinkle them with just a light dusting of sugar just as they remove them but I do not.
