RED BEANS & RICE 
1 lb. red beans
1 ring sausage
1 med. onion, chopped
2 c. celery, chopped
1 red pepper
2 cloves garlic, chopped
1 tsp. Creole seasoning
Thyme (opt.)
Salt & pepper

Wash beans. Add all ingredients, cutting sausage in 1/2" slices. Cover with water. Cook on high then simmer with lid for 1 to 1 1/2 hours or until tender. Add more water or seasoning as needed. Cook rice according to package directions. Serve beans over rice with green salad and French bread.
