LEMON COTTAGE PUDDING 
1 cup cake flour, sifted before measuring
2 tbsp. butter
1/4 cup sugar
2 tsp. baking powder
1 egg, well-beaten
1/4 tsp. salt
1/2 cup milk
1 tsp. pure lemon extract

Preheat oven to 350°F.

Mix and sift dry ingredients. Beat butter, gradually adding sugar, until light and fluffy. Add egg, beat well. Add milk and flour alternately. Add lemon extract.

Bake in a well-greased 8-inch square pan for 40 minutes.
