JIM'S SPLIT PEA SOUP | |
1 lg. ham hock, cut in 3 pieces 1 c. chopped onion 3 sm. carrots, chopped 7 c. water 1/4 tsp. thyme 1/2 tsp. pepper 1 lg. clove garlic, chopped fine 1 lb. split peas 1/4 tsp. allspice Boil ham hock in water (7 cups). Simmer about 1 hour until meat pulls away from bone. Use a covered pot. When done remove meat and set aside to cool. Add onions, carrots, garlic, thyme, pepper, allspice and split peas. Bring to boil, turn down heat and simmer. Cut meat from bones and dice. Add to pot. Cook until it starts to get thick. |
