CHICKEN CASSEROLE 
2 whole chicken breasts, cooked and deboned
1 med. onion
2 (4 oz.) pkgs. "Townhouse" or "Ritz" crackers
1 stick + 2 tbsp. butter
1 can cream of mushroom soup
1 can cream of chicken soup
1 (8 oz.) container sour cream
Salt and pepper to taste

Saute onion in 2 tablespoons of butter until onion is clear. Set aside. Crush crackers and mix with stick of melted butter. Pat down mixture in 13 x 9 inch casserole pan, except for 1 cup of cracker mixture. Cut up cooked chicken and spread over cracker mixture.

Mix together, cream of mushroom soup, cream of chicken soup, sour cream, sauteed onion and 2 tablespoons of water. Spread over chicken. Sprinkle with remaining cracker mixture. Bake at 350 degrees for 35 to 45 minutes, uncovered. (Great served with a tossed salad).
