CARROT CAKE AND CREAM CHEESE FROSTING | |
2 c. flour 2 c. sugar 3 c. grated carrots 1 c. oil 2 tsp. baking soda 1 tsp. cinnamon 4 eggs 1 c. nuts Combine ingredients with an electric mixer, adding eggs, one at a time, and carrots and nuts last. Pour into a greased and floured pan. Bake at 325 degrees for 1 hour. FROSTING: 3 oz. cream cheese 1 c. powdered sugar 2 tbsp. shortening 1/4 tsp. almond extract Blend ingredients. Cake may be frosted while warm. This is enough frosting for a very thin layer which seems to be all the cake needs. |
