CARROT CAKE AND FROSTING 
1 3/4 c. sugar
1 c. oil
4 eggs
2 c. flour
1 tsp. salt
1 c. chopped nuts
3 c. grated carrots
2 tsp. baking soda
1 tsp. cinnamon
2 tsp. baking powder

Cream sugar and oil. Add eggs, one at a time. Sift dry ingredients. Add gradually. Add carrots and nuts. Bake at 375 degrees for 30 minutes or until done. Makes a big cake.

FROSTING:

1 pkg. powdered sugar
1 (8 oz.) pkg. cream cheese
1 sm. can crushed pineapple
1/2 stick butter
2 tsp. vanilla

Drain pineapple well. Mix together well. Have cheese and butter at room temperature. (Half of this frosting is enough for me). The frosting makes the cake.
