ONION-BARBECUED POTATOES 
6 med. potatoes, peeled
1 med. onion, thinly sliced
1/3 c. butter, melted
1/2 pkg. dry onion soup mix

With a knife, slit each potato in thirds, slicing almost to the bottom, but not all the way through. Arrange onion slices in slits. Place potatoes on individual squares of foil and brush with melted butter. Sprinkle each with some onion soup mix, dividing it evenly among them. Close foil over potatoes with a double fold to seal. Bake at 350 degrees for 1 hour. Can be cooked outdoors on grill. For variation, try some grated cheese in addition.
