ZUCCHINI CASSEROLE | |
4 c. sliced unpared zucchini 4 tomatoes, peeled and sliced 1 pkg. (8 oz.) sliced American cheese or grated Cheddar 3 c. caraway rye bread crumbs 1 med. onion, sliced 1/8 c. chopped green Pepper 1/4 c. butter, melted Parboil zucchini slices in water with 1/2 tsp. garlic salt for a few minutes (this is optional). If fresh tomatoes are not in season a small can of tomato sauce can be substituted. Alternate layer of squash, onion, tomatoes and green pepper in a baking dish. Season, top with grated cheese and bread cubes and drizzle melted butter over the top. Cover and bake at 350 degrees for 30 to 40 minutes, uncover and bake for 15 minutes longer. Serves 8 to 10. |
