COCONUT RUM FLAN 
1/2 c. chopped nuts (almonds)
2 tbsp. brown sugar
1 tsp. cinnamon
2 c. milk
1/2 c. coconut
2 eggs, separated
1/2 c. sugar
1/4 tsp. salt
3 tbsp. rum

Beat egg yolks. Whip egg whites until stiff. Heat milk and add to egg yolks, sugar, salt, cinnamon and stir. Add rum, coconut, nuts; also fold egg whites into custard mix. Pour all into a buttered casserole. Set oven temperature at 350 degrees. Place casserole dish in a pan of hot water and bake for 45 minutes or until set.
