PORK CHOPS AND RICE CASSEROLE
8 to 10 pork chops
2 c. uncooked rice
7 c. water, divided
2 pkg. brown gravy mix
2 pkg. Lipton onion soup mix
2 cans cream of mushroom soup
salt and pepper to taste

Preheat oven to 375°F. Combine rice and 4 cups of water (1 teaspoon salt, optional) in a large pan. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. While rice is cooking, lightly brown each side of pork chops and set aside (about 2 minutes on medium heat for each side). Combine gravy mix, onion soup mix and 3 cups water in saucepan. Cook over medium heat until it thickens, about 2 to 3 minutes. Pour sauce over rice; mix well. Grease a large casserole dish (lightly with Pam). Layer with rice and single row of pork chops. Repeat procedure.
