BROCCOLI & RICE CASSEROLE 
1 c. fast cooking rice (brown or white), cook according to package directions
1/2 c. chopped onion
1 tsp. butter or cooking spray
1 can cream of mushroom soup
2 (10 oz.) jars of sliced mushrooms, drained
2 pkg. (10 oz. each) frozen chopped broccoli, thawed and drained
1 1/2 c. grated Cheddar cheese
Pepper to taste

Cook rice according to package directions. Saute onions in butter or in non-stick pan using cooking spray. Spray 2 quart casserole dish with cooking spray. Mix onions and rice in dish and pepper to taste. Layer sliced mushrooms, then spread with mushroom soup. Layer chopped broccoli next and then top with Cheddar cheese. Bake at 350 degrees for 45 minutes.

Can be prepared ahead of time and refrigerated before baking.
