MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 (20 oz.) can peach, blueberry or cherry pie filling
1/2 c. sliced nuts (optional)

Line cupcake pans with liners. Place wafer in bottom of each liner. In bowl, beat next 5 ingredients until fluffy. Fill liners 2/3 full with cheese mixture. Bake at 375 degrees for 15-20 minutes or until set. Top with spoonful of filling and 1 teaspoon of nuts. Chill.
