PETTIE CHEESECAKE 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkg. cream cheese
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
1 can any flavor pie filling

Line cupcake pan with liners. Put one cookie in each pan.

In a large mixing bowl, cream together cream cheese, sugar, egg, lemon juice and vanilla. Put batter into each cup and bake at 375 degrees for 15-20 minutes. Cool completely and top with a tablespoon of pie filling. Can use fresh fruit, if you prefer.
