RAISIN RICE PUDDING 
4 eggs
3/4 c. sugar
2/c. milk
1 1/3 c. cooked long grain rice
1 1/2 tsp. lemon juice
1 1/2 tsp. vanilla extract
1 tbsp. butter, melted
1 tsp. ground nutmeg
2/3 c. raisins

Combine eggs, sugar, lemon juice and flavoring. Beat at medium speed 1-2 minutes or until sugar dissolves. Add remaining ingredients; mix well. Pour into well-greased 1 1/2-quart casserole.

Place casserole in a baking pan. Pour boiling water into baking pan to a depth of 1 inch. Bake uncovered at 350 degrees for 40-45 minutes or until mixture is slightly thickened. Stir and bake 10-15 minutes more or until set. May be served warm or at room temperature. Serves 6-8.
