ZUCCHINI FRITTERS | |
1 lb. zucchini 1 tsp. finely chopped onion and green chives 1 tbsp. fresh parsley 1 egg, beaten 1 c. buttermilk pancake mix 1/4 tsp. salt 1/4 tsp. ground black pepper 1/2 c. corn or olive oil, for frying Wash zucchini and grate in blender or by hand. Place in large bowl and add all ingredients except oil. Heat oil in fryer - medium high heat. Drop mixture by heaping tablespoons. Brown about 3 minutes each side. Drain on paper towel. Serves 6-8. 14 fritters. |
