1 c. sugar 1 c. brown sugar 1 c. butter 2 beaten eggs 2 tsp. vanilla 4 c. flour 1/2 tsp. salt 1/2 tsp. baking powder 1/2 tsp. baking soda 1 c. chopped nuts 2 (6 oz.) cans drained pineapple Beat sugars and butter. Add to eggs and vanilla and beat until fluffy. Sift flour, salt, baking powder, baking soda and add to above. Add nuts and crushed pineapple. Mix well. Drop lightly on greased cookie sheet. Bake at 350 degrees for 10 minutes. Cut marshmallows in half and put on cookie while hot. When cooled, put icing on marshmallow cookie and roll in coconut. 110 cookies. ICING: 2 sticks butter 1 c. Crisco 2 c. sugar 2 tsp. vanilla 1 c. lukewarm milk 8 tbsp. flour Beat about 10 minutes until creamy. |
