VEGETABLE - CHEESE BAKE 
2 (10 oz.) pkgs. frozen mixed vegetables
1/2 c. boiling water
1/4 c. butter
1/4 c. flour
1 1/2 c. milk, scalded
1/4 c. grated Cheddar cheese
1/4 tsp. pepper and salt
1/2 c. chopped green onions
1/4 c. sliced pimento

In a saucepan, combine frozen vegetables and boiling water. Bring to a boil again. Cover and simmer 5 minutes. Drain well. Meanwhile, melt the butter in a saucepan. Blend in flour. Cook for 1 minute. Gradually stir in milk. Simmer, stirring, until smooth and thickened. Add cheese and seasonings. Mix in vegetables, onions, and pimento. Spread into buttered 1 quart casserole. Bake at 350 degrees for 30 minutes or until bubbly.
