VEGETABLE - CHEESE BAKE 
2 cloves garlic, sliced (or powder)
2 tbsp. olive oil
1 bunch broccoli, cut into florets
1 med. red pepper, cut into thin strips
1/4 tsp. salt
4 eggs
1 c. milk
1 c. or 4 oz. sharp Cheddar cheese (reserve 1/4 c.), grated
1/2 tsp. thyme

Preheat oven to 350 degrees. Grease 9 inch baking pan. In skillet, cook garlic, broccoli, red pepper and salt 2 minutes. Cover and cook, stirring occasionally, 8-10 minutes until vegetables are tender. Spoon vegetables into pan.

In bowl, whisk together eggs, milk, 3/4 cup cheese and thyme. Pour egg mixture over vegetables. Bake 35 minutes. Sprinkle 1/4 cup cheese on top. Bake 5 minutes or until cheese melts and egg mixture are set.
