OYSTER DRESSING | |
1 lb. saltine crackers, crushed 2 sticks butter, melted 2 pts. oysters, reserve liquid 2 raw eggs, beat briefly 1 sm. can Pet evaporated milk Chicken broth 2 cubes bouillon, chicken 4 hard boiled eggs, chopped 1 tsp. salt 1/4 tsp. pepper 1 tsp. poultry seasoning Need - large mixing bowl, 4 cup measuring cup, long handle spoon, and glass 9 x 13 inch baking dish. In 4 cups measuring cup put oyster liquid, 2 raw eggs, pet milk and enough broth with bouillon to fill container to "4 cup" measure. Put other ingredients in mixing bowl and pour liquid mixture over. Mix well and spoon into 9 x 13 inch glass baking dish. Bake at 350 degrees for 35 to 45 minutes - until golden. (May substitute chicken soup or liquid from giblet gravy for broth-bouillon). |
