OYSTER DRESSING | |
1 lg. loaf bread (1 or 2 days old) 3 eggs 1 c. chopped celery 1 qt. oysters (check and remove any shells) 2 c. chicken broth Salt and pepper Break bread into small pieces and place in large mixing bowl, scald the bread with boiling water (lightly). Beat the eggs with fork and pour over mixture; stir with fork. Sprinkle salt and pepper over mixture. Add the celery. Add the oysters. Add boiling chicken broth, enough to make the mixture very wet and sloppy (probably 1 1/2 or 2 cups of broth). Place in baking dish (deep oval Corning or glass dish is nice). Bake in slow oven 350 degrees for 2 1/2 to 3 hours. A glass dish is nice. |
