LILLIAN'S SWEET POTATO PONE | |
1 (#2 1/2) can Sugary Sam yams 1 stick butter 1/2 c. sugar 2 tbsp. brown sugar CUSTARD: 4 whole lg. eggs (if med., use 6) 1 lg. can evaporated milk 1 tsp. vanilla 1 tsp. maple extract Bring butter, white sugar, brown sugar and juice from can of yams to a boil and cook until thick. Mash yams with potato masher and then add to above mixture and cook until yams are hot. Let this mixture cool. Once potatoes have cooked, it is time to add the custard ingredients. Mix the custard ingredients with the sweet potatoes in a blender and blend until mixture is mixed well. Pour the mixture in a greased 12"x12" dish and set the dish in a pan of water in the oven. Bake at 350 degrees until when tested the knife comes out clean. Turn oven off and leave dish in oven until time to serve. |
