FRENCH FRIED ONION RINGS 
3 or 4 lg. sweet onions, peeled, thinly sliced
1/2 c. milk
1 tsp. salt
1 1/16 tsp. pepper
1/2 c. flour
Oil for deep frying

Separate onion slices into rings. Dip a few slices at a time into milk that has been seasoned with salt and pepper, then into flour, coating lightly. Place rings apart on a sheet of waxed paper. To Fry: Heat shortening in a deep fat fryer or saucepan (4 quarts) to 360 to 375 degrees, 3" of fat in saucepan is sufficient. Fry a few onion rings at a time until golden brown. Remove from fat and drain on absorbent paper. Transfer to tray and place in 250 degree oven to keep hot while completing frying.
