FRENCH FRIED ONION RINGS
3/4 c. sifted flour
1/4 tsp. salt
1/2 c. milk
2 tbsp. oil
1 egg
2 lg. Bermuda onions
1 qt. oil for deep frying

Sift flour and salt into bowl. Add milk, 2 tablespoons oil and egg. Beat until smooth. Cut onions into 1/4 inch slices and separate into rings. Dip each ring into batter. Drain excess batter over bowl.

Meanwhile, place oil into 3 quart saucepan. Heat over medium heat to 375 degrees on deep fat thermometer or until hot enough to brown a cube of day old bread in 40 to 50 seconds. Drop a few rings at a time into the heated oil. Do not crowd rings. Fry 3 to 4 minutes, turning occasionally until golden brown. Drain on paper toweling. Makes 4 to 6 servings.
