CHICKEN AND PEPPERS | |
2 red peppers 2 green peppers 2 onions 1/2 - 1 lb. mushrooms 3 single boned chicken breasts 1/4 c. olive oil Seasoned salt 4 garlic cloves 1/2 c. good sherry Fresh parsley (optional) Cut peppers, onions and chicken into bite sized pieces. Slice or quarter mushrooms. Put 1/3 cup olive oil in fry pan, add peppers and onions and cook over low heat, covered, stirring occasionally for about 20 minutes. Do not brown. Add mushrooms, crushed garlic and chicken. Sprinkle with seasoned salt and cook until chicken and mushrooms are done (about 5 minutes). Pour 1/4 - 1/2 cup sherry over everything and serve with rice or noodles. Sprinkle with parsley if desired. |
