APPLE JELLY RING 
8 dessert apples
2 1/2 c. water
Juice of 2 lemons
Grated rind of 2 lemons
1/4 c. sugar
2 pkgs. lemon-flavored jello
9 inch ring mold

Core and peel apples, cut into pieces. Save few pieces of peel. Put water, lemon juice, rind and sugar into pan; bring to boil. Poach apple pieces for 10 minutes in this syrup.

Lift out apples and stir in syrup. Measure and add enough water to give 3 1/2 cups. Reheat; dissolve the lemon jello. Pour thin layer of jello into mold; allow to set. Arrange apple pieces and strips of peel. Cover with cold liquid jello. Leave to set. Continue like this until mold is filled.
